Protein Pina Colada

Who else is summer ready after this awful winter storm that raged across the states recently? I sure am! And what better way to kick off the vibes of summer than with the appropriate drink. I would highly recommend finding that rum extract in your grocery store's baking aisle as it brings this smoothie to a new level, but it tastes just as good without it. The toasted coconut gives it that really coconutty flavor. I could literally drown myself in this treat! Enjoy your virgin cocktail with the peace of mind that you are fueling your body well.


Protein Pina Colada

Recipe makes 1 serving as meal or 2 servings as snack

Time: 5 minutes


Ingredients:

2 cups Coconut Milk, unsweetened (chilled)*

1.5 cups Pineapple chunks, frozen

1.5 scoops TRU Coconut Macaron Protein

3 tbsp toasted Coconut flakes, unsweetened

1/2 tsp Rum Extract (optional)

1) Add all ingredients into a high speed blender and blend until smooth. 


Optional: 

2) Top with coconut whipped cream, pineapple bits and toasted coconut flakes to make it look even more appetizing.

3) Serve and top with your favorite things. I used plant yogurt, TRU Nut Butter, frozen berries and homemade granola.

*This is unsweetened coconut milk from the milk isle, DO NOT use canned coconut milk for cooking as it is way more calorie dense and higher in fat.
