Strawberry Pistachio Shortcake Bites

I was craving strawberry cake for a week now, but instead of drowning myself in a pool of actual cake full of saturated fats, empty carbs and mountains of sugar I decided to go with the healthy option. I am not sure how it happened but I ended up with a pantry full of nuts, so let's put them to good use in this recipe. Feel free to modify what type of nuts you want to use if you are allergic to one particular kind. The reason I used cashews is because it is the most creamy but also most flavor neutral nut of all, which is why you often find it in vegan cream recipes. Keep these refrigerated for a week or two. I prefer them at room temperature but they will firm up a bit inside the fridge so enjoy how you like it best.

 

Strawberry Pistachio Shortcake Bites

Recipe makes 16 servings

Time: 8 minutes

 

Ingredients:

1 cup Cashews, soaked overnight

1.5 scoops TRU Strawberry Jam Protein

2 tbsp Maple Syrup

1 tsp Vanilla Extract

1/2 cup Water

1/2 cup Cashews

1/2 cup Pistachios*

6 tbsp Coconut Flour**

3 tbsp White Chocolate Chips

1 cup Freeze Dried Strawberries

1) Add raw cashews, pistachios, chocolate chips and coconut flour into the food processor and process until coarse. Add freeze dried strawberries and pulse a few times to cut the strawberries down but not make them powdery. You can also chop them by hand and add them in last. Put aside into a separate bowl.

 

2) Add soaked cashews, maple syrup, vanilla extract, TRU protein and 1/2 cup water into the food processor and process on high until smooth and creamy. 

 

3) Mix dry ingredients with the strawberry cream until well combined and a thick dough forms that can be scooped with a cookie scoop and is sticky enough to hold together. If it is too crumbly, add some water by the tablespoon and mix after each added tablespoon.

 

4) Use a medium cookie scoop and form balls. Serve as is or roll in some of the toppings (see optional note below). Keep Refrigerated.

 

Optional: If you want to get a little fancy, you can process a few more cashews, pistachios, freeze dried strawberries and white chocolate chips together until coarse and roll them in it.

*If you are allergic to pistachios, feel free to use only cashews or replace it with almonds.

** Almond Flour also works great
