Coconut Balls

I am a sucker for anything bite sized, not only because it's easy to eat but also easy to take along with you. If you want a sweet little treat, these snowballs are perfect for you. The white chocolate goes so well with the Coconut and this can be a perfect in between snack when you are busy and get hangry or as a dessert after your lunch and dinner to satisfy your sweet tooth. Now, the TRU challenge is to not eat them all right away.

 

Coconut Snowballs

Recipe makes 12 servings

Time: 5 minutes

 

Ingredients:

1 cup Cashews

1.5 scoop TRU Coconut Macaron Protein Powder

3 Dates, pitted and soaked

1/2 cup Apple Sauce, unsweetened

1/4 cup Coconut Chips

1 serving White Chocolate Chips (15g or 30 chips)

1/2 cup Shredded Coconut, for rolling

1) Add all ingredients besides the shredded coconut into a food processor and pulse until well combined. Scrape the edges in between to fully combine all ingredients. The mixture should be slightly sticky (if not, add water by the tbsp) and some of the ingredients are still chunky to give a good crunch.

2) Use a small cookie scoop to measure out the dough and roll it into balls. Roll in shredded coconut and refrigerate for a few hours or over night. Store in the refrigerator for up to a week.
