Gingerbread Cakes for 2

If you are anything like me and lack the self control to not eat the entire batch of baked good within the first few hours of the day, then you will be happy to hear that we are making a small batch treat today. Gingerbread for two! You can even half the recipe and just make it for yourself to limit the risk of eating more than you should. Gingerbread is one of my favorite winter treats. The warming spices are so comforting. Traditional gingerbread is made with rye flour and a bunch of honey so I wanted to make sure to include both of those ingredients here to give you a somewhat authentic experience. I loved these and I hope you will too!

 

Gingerbread cakes for 2

Recipe makes 2 servings

Time: 20 minutes

 

Ingredients:

1 scoop TRU Protein

2 tbsp Rye Flour

2 tbsp Whole Wheat Flour

1 tsp Baking Powder

1 tsp Cinnamon

1 tsp Gingerbread Spice Mix (see notes for a recipe)

1 tsp Coconut Sugar

1/8 tsp Sea Salt

1 tbsp Avocado or Walnut Oil

4 tbsp Almond Milk

1 tbsp Honey

1) Preheat oven to 350 degrees Fahrenheit. 

 

2) Mix all dry ingredients in a bowl. Add liquid ingredients and mix until combined.

 

3) Separate batter into two oven save ramekins.

 

4) Bake for 15 minutes.

 

5) Let cool and serve as is or dust with powdered sugar.

3 tbsp Cinnamon

2 tbsp Ginger

1 tsp Allspice

1/2 tsp Nutmeg

1/2 tsp Cardamom

1 tsp Cloves
