Since I was a kid, coconut was always one of my favorite flavor. Now you can imagine how excited I was when we released the TRU Coconut Macaron Protein flavor. It's like my wish has been answered and I keep finding new ways to incorporate it in my routine because it has the perfect balance of sweetness to not be overpowering but sweet enough to kill that sweet tooth I have often. Feel free to use any fruit as topping, personally I just think that mango goes so well with coconut but I am sure pineapple would be really delicious as well. I love simple recipes that do not require a lot of steps. Sometimes we just want a fast dessert. Enjoy!
Coconut Cream with Mango
Recipe makes 2 servings
Time: 10 minutes active, 2 hours prep
Ingredients:
1 scoop TRU Coconut Macaron Protein
1/2 - 3/4 cup Cashew Milk, unsweetened
1 cup raw Cashews
5 drops Stevia ( I used coconut flavored stevia)
1/4 cup Shredded Coconut, unsweetened
4 tbsp Mango Puree, pure unsweetened

1) Soak cashews in water for 2 hours or over night.
2) Add TRU Protein with cashew milk in a shaker, shake well and let sit for at least an hour. This step will allow for the protein particles to soak up liquid and avoid the grainy texture. Add 1/2 cup of liquid first and add the rest if needed. The less liquid you add at this step the thicker the cream will be. Use just enough to be able to get the protein powder to soak leaving you with a very thick (almost smoothie like) shake.
3) Add all ingredients to a high speed blender and blend for 2-3 minutes until the cream is smooth and thick.
4) Divide into two containers and top with 2 tbsp of Mango Puree.
