If you are already a friend of oats and oatmeal, overnight oats is basically the lazy version of that. Frankly, this one has an extra step with blending the strawberries but it definitely elevates the flavor versus just using jam or something similar. You can also consider just mashing the strawberries with a fork if you don't mind having some chunks left in the final product. You can also absolutely skip the syrup and add stevia as sweetener instead, this way you remove any added sugar from the recipe. I personally like the flavor of the agave syrup in this recipe. Prepare this the night before to have a quick breakfast to go. Double the recipe to make this a meal prep for a few days.
Strawberry Overnight Oats
Recipe makes 2 servings
Time: 5 minutes active, 2-8 hours passive
1 cup Rolled Oats
1 tbsp Chia Seeds
1 cup fresh Strawberries
1 1/2 cup Plant Milk, unsweetened
1 tbsp Maple Syrup or Agave Syrup
1/2 tsp Vanilla Extract
1 scoop TRU Strawberry Jam Protein
1) Blend plant milk, protein powder and strawberries until smooth.
2) Add into a bowl and mix remaining ingredients. Cover and store in fridge for at least two hours or overnight.
Optional : 3) Serve topped with fresh strawberries or a tablespoon of granola.
